It is mostly a kind of sausage made with newly cut pork blood and rice. Although it is known that it is consumed mostly in Spain and South America countries, it is also made in different styles in Africa, North America and Asian countries. You may come across African names like “mutura”, “blood sausage” in America, “blood tofu” in China, and “black pudding” in England.
This food, which is usually served in Spain as a tapas beside wine and beer, is usually prepared by large families in small towns once a year and with participation of whole family.
